NEW! Advanced Chocolate Class

This class is only for participants who took our chocolate class last year, or will have completed it earlier in the 2026 season.  We will run this advanced class once a month over the summer.  We can now accommodate up to 12 participants per class.  The class will be held on Saturday mornings at 9:30 AM and will last about 2 hours.

You will be making a tray of molded chocolates (24 hearts, or 21 squares) from start to finish, with our assistance at key moments.  As a first step, you will paint your mold, and we will produce a core ganache that you will be able to improve with key ingredients of your choosing (spices/candied citrus/fruits/nuts).  After you have piped the fillings, one of our team members will close your tray.  You will then prepare gift boxes with your finished production, and take them home.

For those of you who are new to making chocolate, check out our first class, which will be held every Sunday over the summer.

Please arrive a few minutes early.  There is parking on both sides of the driveway as you enter the Nightingale campus.  Do not park beyond the handicapped signs. If no parking is available, please park on Winter, Spring, or Brackett Streets.

For all participants, including children (8+ years old):  Hair must be tied back; wear closed shoes; and roll up your sleeves.  We will have aprons for you to use.

We will supply gloves, all ingredients and packaging, so you can take your goodies home. Once you have signed up, please tell us who is coming to this class (kids/friends).  And tell us when you took the class last year.

This class is not appropriate for anyone who has tree nuts or milk allergies. 

IMPORTANT:  REFUND POLICY.  We will be happy to refund you in full if you wish to cancel the class at least two weeks ahead.  With 14 days or fewer, we will refund you 25% if your spots do not end up being taken.  But once they have been taken, we will refund you the rest of your payment.  You also have the option of signing up for another class, as long as space is available, please tell us your date and we will transfer it.
