Exploring the Art of Chocolate: Four Types of Chocolatiers!

Here at Chocolats Passion in Portland, Maine, chocolate isn’t just an indulgence; it’s a craft, a science, and a passion. While many people simply enjoy chocolate, few realize there are distinct styles of chocolatiers, each with their own unique approach to creating these delicious works of art. Today, we’re taking you behind the scenes to explore four main types of chocolatiers—and where we fit into this amazing world.

1. The Truffle Chocolatier                                                                                                 

Truffle chocolatiers specialize in soft, decadent centers—typically ganache—coated in cocoa powder, or other toppings. These treats are known for their rich, melt-in-your-mouth texture and endless flavor possibilities, from classic dark chocolate to infused varieties like raspberry, espresso, or champagne.

2. The Enrobed Chocolatier

Enrobed chocolatiers focus on coating or “enrobing” centers in a layer of tempered chocolate, either by hand-dipping or using enrobing machines. The centers might include caramels, nougats, marshmallows, fruit jellies, or nuts. These chocolates are typically uniform in appearance, with a consistent coating around the filling. The process requires proper tempering to ensure the chocolate sets correctly and forms an even outer layer.

3. The Bean-to-Bar Maker                                                                                             

Bean-to-bar chocolatiers take things all the way back to the beginning. They source raw cacao beans and control every step of the chocolate-making process—from roasting and grinding to refining and tempering. This method highlights the natural flavors of the cacao itself, much like fine wine or coffee. Bean-to-bar chocolate often showcases unique flavor notes depending on where the beans are grown, making each bar a true origin story. 

4. The Shell-Molded Chocolatier (That’s Us!)                                                                   

While some makers start from the bean, our chocolate-making journey begins a bit later in the process. We work with high-quality, fair trade chocolate and transform it into something unexpected; layering flavor, texture, and artistry to create memorable confections.

This technique involves creating a thin chocolate shell using molds, filling it with centers like caramel, ganache, or pate de fruits, and sealing it with more chocolate. The result? Beautiful, glossy confections with a satisfying snap and a surprise inside. Shell molding allows for creativity not only in flavor but also in design—we can craft intricate shapes, vibrant colors, and seasonal designs that make each piece as visually stunning as it is delicious.  We’re often told, “They’re too beautiful to eat!”—but we promise, they’re even better when you do.
