Sharing our love and knowledge of chocolate has always been at the core of who we are. So we are announcing today a big step toward furthering that goal, by offering chocolate making classes! Available weekly this summer for groups of up to 6 people and lasting right under one hour.
Customers have asked us for years to make them available, but our space on Brackett Street was simply too minuscule. Our new facility on Spring Street is the perfect size to teach small groups, but our first year there was devoted to getting into our production and retail rhythms. But we are ready now, and will offer a weekly class starting right after Mother's day and going to Labor day. Those 16 weeks represent what we call our slow season and are the ideal time to connect with all of you.
To make it the perfect activity for a group of friends, or as a family activity, we want to lower the technical difficulty while not sacrificing quality. This means that we will make the most classic French chocolate confection known to man, Mendiants! As the picture above shows, they are free-form and round, and hold a variety of yummy additions.
Our students will have access to a wide range of exquisite ingredients, the very same we use day to day to make our excellent chocolates. We will use dark, milk and caramelized white chocolates, all fair-trade from our regular suppliers. Our tree nuts will be available roasted or candied with spices, and our organic candied citrus will include several choices from Meyer lemon, grapefruit, Sorrento lemon, or orange. We will provide delicious additions such as caramels, candied ginger, freeze-dried fruits and more.
Each student will be able to taste that day's slate of ingredients to make pairing choices between chocolates and the toppings. We will discuss flavor profiles that work well with the different chocolates and how to maximize deliciousness.
Finally, you will be able to package your creations and take them home to enjoy or gift. We so look forward to spending time with you this summer!
