A Silver, and a Gold for Audi

Between our core Collection, and our four Chocolatier Choice editions, we have 46 chocolates in active production! And that doesn't count any formats on the confection side (many bars, hazelnut crème, pâte de fruits, vegan offerings, etc...). As our customers know, they range from super classic to rather wild. So how do we do it?
In a traditional chocolate business, the owner or head chocolatier would be the one entrusted with creating new offerings, and the rest of the team would be charged with executing that vision. But, imagine being a really creative underling in such a setting, and not having an outlet for great ideas?
We see it differently, and from the moment I hired Darcy, my first co-chocolatier, back in 2018, I knew that we would have a different model: we simply hire talented, experienced food industry people who want to create.
And so it was with Audi, who came to us a year ago with 15 years of experience, most in pastry, and who already had a good knowledge of chocolate. When she interviewed with us, she gave us her version of a Dubai bar, intensely delicious. We instantly knew she would be a great fit for our little team.
Since joining us, she has created a chocolate for our 2026 collection (soon to be unveiled), two bars and her Thai Chili Caramel chocolate. We just knew this one would earn her raves, and it did with a Silver medal from Academy of Chocolate in London, the world's top competition, and a Gold medal from the International Chocolate Salon in San Francisco. That her inspiration was a Thai soup (!) is a fun little fact that offers a glimpse of her creative process, and makes us excited about her next offerings.
