Two of our Chocolatier's Choice offerings won medals at the world's most prestigious chocolate competition! Miso Sesame won a Silver medal, and Almond Calamansi a Bronze. And Hazelnut Java received a commendation, right under medal level.
This very special mini collection holds four large multi-layered chocolates that represent the very best of our skill as chocolatiers. Time consuming and complex to make, they are done in limited numbers. Find out a bit more about them in our blog here. The four are:
- Hazelnut Java, a three-layered chocolate cast in milk chocolate, with coffee caramel, a smooth hazelnut gianduja, and a crunchy caramelized hazelnut bottom component. Commendation/Academy of Chocolate, UK.
- Miso Sesame, cast in caramelized white chocolate, with a sweet miso layer, and a crunchy sesame gianduja. Umami explosion! Easily our most unusual chocolate, but the components are magic together. 2022 Silver medal winner/Academy of Chocolate, UK.
- Almond Calamansi, a four-part chocolate cast in dark chocolate, with a Calamansi (cross between a lime and a mandarin) Pâte de Fruits, candied Calamansi peel, almond ganache and a crunchy caramelized Marcona almonds base. 2022 Bronze medal winner/Academy of Chocolate, UK.
- Tropical Pet d'Ange, (it actually means Angel Fart, which is a legitimate marshmallow French confection!) this dark chocolate has three components: a soft marshmallow with passion fruit; a lime ganache, and a contrasting crunchy layer with Marcona almonds and coconut.
